Hearty Sweet Vegetable Stew

Servings:3–4 servings

Recipe:This stew is great for activating heart energy. If you crave sweets, this is the dish for you! In order to make this dish more Source-friendly, try adding beans or chickpeas to it. Serve the stew over cooked grains, such as brown rice.

  • 1 c. water
  • 1 carrot, cubed
  • 1½ lbs. butternut squash, seeded and cubed
  • 2 large sweet potatoes, peeled and cubed
  • 1 clove garlic, minced or pressed
  • 1 c. broccoli florets
  • 1 zucchini, cut into chunks
  • 3 cloves garlic, pressed
  • ¼ c. olive oil
  • Curry, Tabasco and tamari sauce, and agave syrup to taste

In a large pot, add carrots, squash and sweet potatoes to water and let boil. Reduce heat and simmer until vegetables are soft, about 20 minutes. Add broccoli and zucchini and heat thoroughly, another 5 minutes. While stirring, add the rest of the ingredients. Cook until vegetables become very soft, about 5 minutes.
