Butternut Squash Soup

Servings:4–5 servings

Recipe:This one is the ultimate sweet Heart soup. Extremely delicious, it takes a very short time to make. Because of its rich consistency, your guests are going to be amazed that this soup doesn't contain any oil or cream. This soup is delicious topped with a tbsp. of soy sour cream and some chopped parsley.

  • 2 medium butternut squash, cubed
  • 5 c. water
  • 1 cube low–sodium vegan soup
  • 1 small onion, chopped
  • 4 tbsp. parsley, divided
  • 2 to 3 tbsp. agave syrup to taste

In a large pot, combine the squash, onion, parsley and water. Bring to a boil. Add the vegan soup cube. Reduce heat and simmer for 20 minutes, or until the squash becomes soft. Remove from heat to cool. Transfer the soup to a food processor and blend until smooth. If the soup isn't sweet enough, add some agave syrup. Top with chopped parsley.
