All recipes take very little time to make, but they are completely mouth–watering!

Spinach, Carrots, Celery and Radicchio Salad

Servings:3–4 servings

Recipe:Another staple, this salad has a very refreshing, spring-like feel.

  • 2 c. baby spinach
  • 3 medium cucumbers, peeled and sliced
  • 1 large carrot, shredded
  • 2 celery stalks, sliced
  • 4 green onions, sliced
  • 2 tbsp. fresh cilantro, diced
  • 5 medium radicchios, thinly sliced
  • 1 medium avocado, peeled and sliced
  • 4 tbsp. olive oil
  • 1 tsp. tamari sauce

Wash spinach leaves. Mix all ingredients, except the olive oil and tamari sauce. Combine these to use as a dressing. Serve immediately.

Variation to recipe: Add nuts or seeds. Or add fresh, cubed tofu or leaving off the avocado.
